Viola! Veggie Noodles!

I love my Veggitti! There are tons of ways to prepare veggies, but when it came to zucchini it was either zucchini bread, or sliced or grilled zucchini for me. Or none at all because it seemed like too much trouble!

When I heard I could substitute zucchini for pasta noodles or even rice as a side dish I was like, let me try that! It only took one turn of the zucchini and I was sold. Even my husband (the non-veggie man) has been known to shred his own zucchini noodles for a meal. That is saying something for sure!

I recommend smaller zucchinis for this because there is less waste and way less frustration when preparing. Grab your zucchini and get shredding!


 Heat a teaspoon or so of olive oil in a pan with a couple cloves of garlic. We add some red pepper flakes too and sometimes mushrooms. Add the zucchini noodles and cook 3-5 minutes, turning them over now and then. Remove the noodles from the pan and if you’re having shrimp like I did, add your shrimp to the warm pan and cook until shrimp are pink. I use thawed pre -cooked frozen shrimp, which makes it quick!

 Combine it all together on a plate or in a bowl and enjoy!
