Blueberry Banana Quinoa Muffins

I had to make these twice because I forgot the flour the first time! Oops! I love blueberry muffins from Dunkin Donuts! When I saw these I was skeptical, but even try and have been pleasantly surprised with how much I enjoy them.

Ingredients:

  • 1.5 Cups of oat flour
  • 1/4 Cup Dry Quinoa
  • 1 Ripe Banana Mashed
  • 1//4 Cup of Agave Nectar or Honey
  • 1/2 Cup of Unsweetened Applesauce
  • 1/2 Cup Non-Fat Plain Greek Yogurt
  • 3T Stevia (Separated 1T and 2T)
  • 1/2 tsp Vanilla Extract
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 Egg
  • 2 Egg Whites
  • 1/2 Cup Blueberries 

 

These are gluten free
 
Preheat oven to 350° F

Boil 1/4 Cup of quinoa in 1/2 Cup of water with 2 tsp of stevia and a few shakes of cinnamon until all water is absorbed.This will boil quickly! Really keep an eye on it! Remove from heat once absorbed and set aside. 

Mash banana and mix in all other ingredients but blueberries.  

Add the quinoa and mix again

Add in blueberries

Pour into 12 muffin muffin tin sprayed with coconut/vegetable oil (I use parchment paper muffin cups)

Bake for 20-23 minutes until toothpick comes clean.

I forgot the egg whites!
