Bright Lemon Vinaigrette

This vinaigrette is good for traditional salads and also to dress vegetables! 


  • 1 lemon
  • 1 shallot
  • 1 tbsp whole grain Dijon mustard
  • 2 tbsp olive oil 


Quarter and deseed the lemon. Peel and mince the shallot to get 2 tablespoons. Place shallots in a bowl with the juice of all 4 lemon wedges. Let this sit about 10 minutes.

To make the vinaigrette and the mustard to the shallots and lemon juice mixture. Season with salt and pepper to taste. Slowly whisk in 2 tablespoons of olive oil until well combined. 

Tasty and tangy!
