Baked Oatmeal with Fruit

I try not to skip breakfast! But, I’m also always in a hurry in the morning and can’t spend a lot of time making a 5 star meal. Usually it’s Shakeology for breakfast — lately, though, I switched that up to get some carbs in now that I am doing a weight lifting program. I have also been eating overnight oats in the morning, but was happy to try a new recipe this week. I went with mostly unsweetened ingredients, so I think I’ll top my servings with a drizzle of honey or maple syrup.

Ingredients
* 1¾ cup rolled oats (I used 1 cup of rolled and 3/4 cup steel cut)
* 1/3 cup maple syrup, divided
* ¼ teaspoon kosher salt
* ½ cup crushed pecans
* 1 teaspoon cinnamon
* 1 cup blueberries
* 1 cup strawberries, stemmed and cut in half
* 1 egg
* 3 Tablespoons unsweetened applesauce
* 1 teaspoon pure vanilla extract
* 2 cups unsweetened almond milk

Before baking

 

Steps
1. Preheat the oven to 350°F. Spray a 7-inch x 11-inch baking/casserole dish with non-stick cooking spray and set aside.
2. In a medium bowl, mix the rolled oats, salt, sliced almonds, and cinnamon.
3. Spread half of the oat mixture evenly into the prepared dish. Scatter half of the blueberries and strawberries over the oats, and drizzle half of the maple syrup.
4. Then top that with the remaining oats mixture and the rest of the fruit. Give the baking dish a slight shake to help the ingredients settle into place.
5. In the same bowl you used for the oats mixture, combine the egg, applesauce, vanilla extract, and almond milk. Mix until everything is well combined, then pour the milk mixture over the oats and fruit. Drizzle in the remaining maple syrup.
6. Bake for 40 – 50 minutes or until the oats are golden brown, have set, and are tender.

Cut into slices/servings and enjoy warm or store for later!
