3 Pepper Summer Salad!

SUMMER SALAD!!!

This three pepper salad recipe is the perfect side dish for summer barbecues and makes a great healthy take-a-long dish for potluck get togethers!! It’s SUPER SIMPLE and EASY to throw together and adds a refreshing flair to any meal.

I love peppers and am always hunting for new, tasty ways to enjoy them. Before this I was mainly eating them raw with hummus or cooked in fajita dishes. The rice vinegar/sesame oil mix is one that JUST WORKS!

Ingredients:

  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 1/2 red onion
  • 1/2 cup parsley
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/3 cup crumbled feta cheese
  • Sea salt and pepper

Steps:

  1. Core and seed the three peppers and slice them. Add them to a large bowl.
  2. Slice the onion and add them to the bowl along with parsley.
  3. Add the rice vinegar, sesame oil, salt, and pepper.
  4. Cover and refrigerate for at least an hour, toss with feta cheese and serve.
