Brussels Sprouts & Bacon!

I’m no quitter!!!

I just can’t get anyone in my family to like brussels sprouts. My husband ate them growing up and he has it in his head that he hates them. My daughter keeps trying, and my son, well – no way! I guess that means more for me!

I have prepared brussels sprouts in quite a few ways — these shaved sprouts with bacon are my favorite so far. This is a healthy side I will be taking along to Thanksgiving dinner – maybe with the bacon, my baby brussels will get some attention! You can use turkey bacon or real bacon. I went with real bacon for the added flavor and also as a selling point to my family. They really love bacon.

This is the slicer I used to shave the sprouts! It’s from Pampered Chef.

This recipe will make 2 servings, about 1 cup each

What you need!

  • Nonstick cooking spray
  • 3 slices (turkey) bacon, chopped
  • ¼ medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (10-oz.) bag shaved brussels sprouts
  • 1 to 2 Tbsp. low-sodium organic vegetable broth

Steps

  1. Heat medium nonstick skillet, lightly coated with spray, over medium-high heat.
  2. Add bacon; cook, stirring frequently, for 3 to 4 minutes, or until bacon starts to crisp. Remove bacon from pan and place on a plate with a paper towel. Set aside.
  3. Add onion and garlic; cook, stirring frequently, for 1 minute.
  4. Add brussels sprouts; cook, stirring frequently, for 2 minutes, or until well-mixed.
  5. Add 1 to 2 Tbsp. broth; cook, stirring occasionally, for 5 to 7 minutes, or until brussels sprouts soften and are cooked through.
  6. Evenly divide brussels sprouts mixture between two serving plates; top with bacon and enjoy
