Pumpkin Spice Banana Bread with Honey & Applesauce instead of Sugar and Oil

When fall gets into the air, it means it’s time for all things PUMPKIN. I saw a recipe for a healthier banana bread and decided to “spice it up” for the season. First, make sure you have pumpkin spices! Here’s the blend I made. It’s so easy – I made some extra for flavoring other things this fall! While this bread may not be the healthiest meal option, it is certainly better for us than many of the prepackaged, processed items you see overflowing the store shelves at this time of year.

DIY Pumpkin Spice

Making your own pumpkin spice blend is easy. You can control the amounts of each spice to find the perfect blend for your morning smoothies, dessert dishes and even chili!

INGREDIENTS

  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sugar free applesauce
  • 3/4 cup honey
  • 2 eggs, beaten
  • 3-4 mashed overripe bananas
  • Pumpkin Spice Seasoning (see above)

Steps

Preheat oven to 350º F and lightly grease a 9×5 inch loaf pan or use a muffin pan. I used the Pampered Chef brownie pan to make fun, individual muffins:)

In a large bowl, combine flour, baking soda, pumpkin spice seasoning and salt. In a separate bowl, mix together the applesauce and honey. Stir in eggs and mashed bananas until well blended.

Stir banana mixture into flour mixture, just enough to moisten. Pour batter into prepared loaf pan or into muffin tin cups.

For a loaf pan, bake in a preheated oven for 60 to 65 minutes, until a toothpick inserted into the center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn over onto a wire rack.

For the muffin tin pan method, bake in a preheated oven for 25-35 minutes, until a toothpick inserted into center comes out clean.
