2mashed plantainsripe but not too ripe (yellow, or yellow with some brown spots)
1/3cupoats
3cupsshredded zucchini
2tbspavocado oil
4eggs
2egg whites
1/4tspsalt
1Tbspcinnamon
2tspcoconut oil or ghee butter
Instructions
Place all ingredients in a blender.
Puree until smooth.
Warm coconut oil or ghee butter (I use a tbsp) in cast-iron pan or skillet (you may need to add oil in between pancakes to prevent sticking)
Once oil is hot, drop puree by 1/4 cup on to skillet.
Cook approx. 3 minutes per side or until cooked through.
Notes
An alternative cooking method is to spray a sheet pan and spread the batter on the sheet pan. Cook on 375ºF for 17-20 minutes. Check the center to make sure they're cooked through.
