Easy Energy Bites

How are you with snacking? It’s a constant battle for many, myself included. This easy energy bites recipe might be just what you need! Around our house, there are many times I see someone standing and staring into the cabinet in search of the snack that will satisfy. Of course, the grocery store is full of snacks – so many, in fact that it’s can be overwhelming about which ones to toss into the cart.

Grab my go-to snack list for a little help with what choices to make and then definitely give these a shot. Don’t skip the chilling step – that’s super important if you are going to roll them. You wouldn’t want to lose any of the goodness because it all stuck to your hands.

Easy Energy Bites

This mixture can be formed into bars or balls. Easy to make and easy to pop into your mouth any time of day.

Ingredients
  

  • 1 1/4 cup dry old fashioned easy oats
  • 1/2 cup nut butter of choice all natural!
  • 1/3 cup maple syrup all natural!
  • 3 Tbsp chopped dried apricots
  • 3 Tbsp dark chocolate chips coarsely chopped
  • 3 Tbsp chopped raw almonds
  • 1 Tbsp flaxseeds
  • 1 Tbsp chia seeds
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp sea salt

Instructions
 

  • Combine the oats, nut butter, maple syrup, apricots, chocolate chips, almonds, flaxseeds, chia seeds, vanilla extract, and salt in a mixing bowl and mix well.
  • Refrigerate for 30 minutes.
  • With clean hands, roll into 1 Tbsp size balls or spread flat in a 8 x 8 dish and cut into 20 pieces.
  • Store in an airtight container in the refrigerator for up to 2 weeks.
