Balsamic Glazed Chicken Dinner

Winner, winner chicken dinner… Chicken is a standard protein at our house, and I am always on the hunt for ways to prepare it that will satisfy my family. I grew up eating chicken legs and thighs and so did my husband. Oh, and of course, chicken tenders and nuggets.

Of course, out of all the chicken choices we have at the grocery story, the healthiest option is fresh chicken breast. The white meat has slightly less cholesterol than the dark meat and it is definitely lower in saturated fats. The problem used to be that white meat chicken breast would turn out dry and not as tasty as the dark meat.

This chicken, on the other hand, is far from dry and tasteless! My husband said the chicken was tender and tasty – that is HIGH PRAISE, my friend.

Balsamic Chicken

Tender, Tasty and Moist.

Cook Time 14 minutes

Ingredients
  

  • 1/2 cup balsamic vinegar
  • 1 Tbsp raw honey
  • 1 Tbsp whole grain mustard
  • 2 cloves finely chopped garlic
  • 1 tsp finely chopped rosemary
  • 4 4 oz chicken breasts
  • 1/2 tsp se salt
  • 1/2 tsp ground black pepper
  • 2 tsp ghee butter

Instructions
 

  • Combine vinegar, honey, mustard, garlic, and rosemary in a small bowl and whisk together.
  • Sprinkle each side of the chicken with salt and pepper.
  • Melt the ghee butter in a large skillet on high heat.
  • Add chicken and cook for about 2 minutes per side.
  • Add the vinegar mixture to the saucepan and cook chicken 4-5 minutes on each side or until chicken is cooked through and sauce is reduced to a thicker glaze.
