Oven Baked Apple Fritter Cookies

Anything with baked apples sounds like a treat to me and you won’t be disappointed with these oven baked apple fritter cookies. Of course, a traditional fritter is a fried pastry of bits of meat, seafood, fruit, vegetables or other ingredients held together with a batter or breading. When you work to live a clean eating lifestyle, “batter” and “fried” are culinary terms to be avoided.

I have to come totally clean here! Originally I set out to remake apple fritters with a clean recipe. I knew that meant baking or pan frying versus deep frying. One thing I have learned from my clean eating journey is that when a recipe is modified to be cleaner, it might not be a perfect replacement. Actually, it’s almost never a perfect replacement.

Clean eating is often about a mindset shift. I know I shouldn’t even call this baked apple dessert fritters and they may not even be cookies. What they are, though, is tasty!

Swapping out your flour choices helps clean up these apple fritter cookies and oven baking saves calories and fats for this “sweet enough” treat. In this recipe, using raw honey as a sweetener doesn’t necessarily save calories, as I explained here, but it’s surely a less processed choice than refined white sugar.

Baked Apple Fritter Cookies

Ingredients
  

  • 1/4 cup coconut flour
  • 1/8 arrowroot flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1 egg
  • 1/4 cup raw honey
  • 1 tsp vanilla extract
  • 1 medium Granny Smith apple 1/4 cubes
  • 1 Tbsp liquid coconut oil

Instructions
 

  • Preheat oven to 375°
  • Line your baking sheet with parchment paper.
  • Combine coconut flour, arrowroot flour, baking powder and cinnamon in a medium mixing bowl.
  • Add the egg, honey, vanilla extract, and coconut milk. Mix.
  • Add the cubed apple and mix again.
  • Scoop by tablespoons onto the parchment paper.
  • Brush each fritter with coconut oil and bake for 15 minutes.
  • Serve with a drizzle of honey if desired.
