Blueberry Oatmeal Muffins

I really love these blueberry “muffins” for a midday snack and sometimes even in the evening when the sweet tooth starts aching!

Baked Oatmeal Cups with Bananas and Berries

Prep Time 15 minutes
Cook Time 30 minutes
Servings 12 muffins

Ingredients
  

  • 2 large eggs lightly beaten
  • 1 tsp pure vanilla extract
  • 2 large bananas mashed
  • 1 Tbsp RAW honey
  • 2 ½ cups old fashioned oats I used quick oats!
  • 1 Tbsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 1 1/2 cups unsweetened almond milk
  • 1 cup fresh blueberries raspberries, and/or blackberries

Instructions
 

  • Preheat the oven to 350 degrees
  • Prepare 12 muffin cups with spray (I use parchment paper muffin cups)
  • Combine eggs, extract, bananas, and honey in a large bowl, mix well and set aside
  • Combine oats, cinnamon, and baking powder in a medium bowl and mix well
  • Add oat mixture to egg mixture and mix it up
  • Add the almond milk and mix again
  • Spoon the mixture evenly into the prepared muffin cup
  • Top evenly with berries of your choice
  • Bake 26 to 30 minutes or until golden brown and toothpick inserted into the center comes out clean

Notes

Option: Use raisins, walnuts, pecans, sunflower seeds, or dark chocolate chips in place of the berries
