Cheesy Cauliflower Nachos

Ingredients
  

  • 1 medium head cauliflower cut into florets
  • 2 tsp. olive oil
  • 1/4 tsp sea salt or Himalayan salt
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • 1/4 tsp garlic powder
  • 1/2 cup shredded Monterey Jack (or pepper jack cheese)
  • 1 can black beans, strained and rinsed
  • 1 can ro-tel, strained
  • 1 jalapeño, sliced
  • 1/2 cup diced avocado approx. 1⁄2 medium
  • 2 Tbsp. finely chopped fresh cilantro
  • 4 oz 2% Fage Greek yogurt

Instructions
 

  • Preheat oven to 425° F. Line a baking sheet with foil for easy cleanup.
  • Place cauliflower florets in a large mixing bowl. Drizzle with oil. Sprinkle with salt, cumin, chili powder, and garlic powder
  • Toss gently to blend. Spread evenly on baking sheet.
  • Bake for 30 to 35 minutes, or until tender-crisp and golden.
  • Evenly top with black beans and ro-tel.
  • Evenly top with cheese. Bake for 3 to 5 minutes, or until cheese is melted.
  • Evenly top with avocado, jalapeños, and cilantro.
  • Top with a dollop of 2% Greek Yogurt
