Delicious, Fluffy Cloud Bread

Cloud Bread is a great low carb bread alternative. It is perfect for those that live a keto lifestyle. Cloud bread is great for sandwiches, wraps, mini pizzas, and even desserts! Cloud bread is fluffy and delicious. There is a basic cloud bread recipe and you can definitely choose seasons to adjust the flavor to fit your tastes. From just onion or garlic powder to rosemary or cumin, the cloud bread is easily modified to match with other components of your meal.

Making cloud bread is pretty simple. I will say that when it comes to whipping egg whites and then gently folding them into batter, preparation can seem a bit trying on the patience. In the end, it’s worth it for this low carb bread alternative.

*TIP* It is super important to READ the directions from start to finish! I have many times gotten started on a recipe only to realize that step 12 required advanced preparation. Hint: The cream cheese will need to be room temperature and the oven temp has to be 300F!

Seasoning Options and Flavors

The base recipe only includes onion or garlic powder as a seasoning. Add a smoky essence by adding chipotle chili powder or smoked paprika. You could also add earthy spices, like ground cumin or curry powder, into the egg yolk-cream cheese mixture before folding in the whipped egg whites. (Add the ingredients to the egg yolks to prevent the beaten egg white mixture from deflating.) 

For dessert or breakfast cloud bread dishes, include a dash of vanilla or a sprinkle of cinnamon or nutmeg in your batter. Sprinkle the top of cloud bread with chopped nuts or sesame seeds right before baking for a bit of crunch. Another great topping is Everything But the Bagel Seasoning to bring out savory flavors.

Ingredients
  

  • 3 large eggs
  • 1/2 tsp baking powder
  • 3 Tbsp cream cheese or plain Greek Yogurt
  • 1/4 tsp kosher salt
  • 1/8 tsp onion powder
  • 2 tsp white or black sesame seeds or Everything But the Bagel Seasoning

Instructions
 

  • Preheat the oven to 300F and line a rimmed baking sheet with parchment paper.
  • Separate 3 large eggs, placing the whites in a large bowl or bowl of a stand mixer, and the yolks in a smaller bowl.
  • Add 1/2 tsp baking powder to the egg whites.
  • Beat the egg whites with an electric hand mixer or a stand mixer with a whisk attachment on high speed until stiff peaks form. About 5 minutes for a hand mixer or 2 minutes for a stand mixer.
  • Place the cream cheese in a small microwave-safe bowl and microwave in small bursts until very soft and stirrable. Stir until smooth and let cool slightly.
  • Add the softened cream cheese, the kosher salt, and garlic or onion powder to the egg yolks and stir to combine.
  • With a rubber spatula, gently fold the egg yolk mixture into the egg whites until combined.
  • Place about 3/4 cup scoops of batter onto the baking sheet and flatten slightly.
  • Sprinkle each round a topping of your choice.
  • Bake for approximately for 25-30 minutes, until they are golden. *Cooking time may vary as all ovens vary slightly.
  • Cool on the baking sheet for at least 20 minutes (the breads will firm up slightly while they cool).
  • Transfer to a storage bag or container and store at room temperature for up to 3 days.
